Fairmont Fujairah Beach Resort

The Fairmont Fujairah Beach Resort is a luxury beach resort set along the coast of Dibba and against the backdrop of the majestic Hajjar mountains. We were invited for an “ocean to plate” tour, that included tasting local fish and oysters at the hotel’s dedicated seafood concept, The Copper Lobster under Chef Georgiy Danilov, and then with a visit to the Dibba Bay Oyster farm which supplies the restaurant with the region’s only locally farmed oysters.

A special thanks to Joanna Huang and Marwa al Omami who invited us to the Fairmont. And an extra special shout out to Marwa who spent two days sharing her knowledge and passion for Dibba with us. It was truly one of the most memorable trips we have had in the country.

Dibba Bay Oysters

Ramie Murray commercialized the first ever local oyster farming operation in Dibba, Fujairah at the start of 2018, after years of testing and fine tuning the concept. He currently supplies to a handful of restaurants in Dubai, one of which is the Maine Oyster Bar and Grill in the Opera House. Read more about his farm here and follow him on Instagram here.
