Sherine Ben Halim Jafar is the Libyan-Palestinian author of Under the Copper Covers. She talks to us about Libyan cuisine as well as about how she used food as a safe haven during her family’s political exile from Libya. For the second half of the show, we transition to a lighthearted chat about one of the Indian subcontinent’s best comfort foods – aloo parathas. We visit a Pakistani restaurant called Khyber Gate in International City, Dubai where they roll their own flaky version of this delicious flatbread.
